We’ve had a few warm days here in Scotland and it looks like there will be more! Time for a refreshing summer salad. One you can quickly whip up and take outside to eat in the garden.
It might sound a bit strange to add fruit to a green salad but why not? It’s perfect for summer. There is a good variety of berries at the moment and they can make a delicious and healthy addition. Plus they are often grown locally so are great for the environment and your local economy. Do make sure you buy berries that are grown organically, especially strawberries – they can be heavily sprayed if they’re not organic…
Berries are especially good for your gut because they contain polyphenols. Polyphenols promote the growth of beneficial gut bacteria while fending off harmful ones. They also contain antioxidants. That means they can neutralise free radicals that damage your cells and increase your risk of conditions like cancer, diabetes, and heart disease. Plus they are low in sugar and delicious!
