Delicous! Sweet potato soup recipe


I always have some sweet potatoes in my fridge – they are so versatile! I often roast them, but also use them in smoothies and soups. Here’s a delicious sweet potato soup recipe that also has other vegetables plus two anti-inflammatory spices: ginger and turmeric!

Soups are always a great way to get your plant diversity in – and that is important for your microbiome. And this soup has 6 different vegetables! If you make a big pot you will have an easy lunch or snack in the fridge. It freezes well too.

Sweet potatoes have a good amount of Beta carotene, vitamin C and potassium. Beta carotene is an antioxidant carotenoid that your body converts into vitamin A. Adding fat – full fat coconut milk from a can is great with this – to the meal can increase your absorption of this compound.
